Position: Breakfast Sous Chef, permanent and full-time, with an expanding hospitality business in Huskisson on the NSW South Coast.
Your remit: run the morning kitchen and partner closely with the Head Chef. You will shape the breakfast menu, lead a small crew, tighten kitchen systems and keep every morning service flowing.

Key Responsibilities
- Own the breakfast kitchen's daily running, leading prep and service to a high standard
- Partner with the Head Chef on how the kitchen operates and where the food is heading
- Supervise up to five breakfast chefs and support them on shift
- Coach and develop junior members of the kitchen
- Help create and fine-tune breakfast menus and seasonal specials
- Keep portions, presentation and food quality consistent
- Organise each day's prep so all mise en place is done
- Handle stock levels, ordering, rotation and waste
- Uphold standards for food safety, hygiene and cleanliness
- Keep work flowing efficiently through busy breakfast services, and look for ways to improve kitchen systems and processes
- Back up the wider kitchen when operations call for it and help foster a respectful, motivated, professional culture
Requirements & Eligibility
- Minimum 2–5 years' experience in a Sous Chef or senior chef role
- Demonstrated background in kitchens focused on breakfast or brunch
- Strong knowledge of modern Australian breakfast and café-style food
- Has previously supervised or led a kitchen team, and can train, mentor and motivate junior chefs
- Strong skills in food preparation and presentation
- Good knowledge of kitchen hygiene and food safety requirements
- Experience in ordering, stock control and keeping food wastage low
- Strong time-management and organisational abilities
- Confident leader and communicator who performs well in busy service periods
- Comfortable with early morning shifts
