Role: Full-Time Butcher with an established meat and poultry operation in Victoria, working across commercial meat preparation and retail production.
Candidates need genuine hands-on ability that covers the whole process, from breaking down carcasses and precise cutting to value-added lines, quality checks and customer orders. Expect to keep product quality steady, handle processing machinery safely and help run an efficient, hygienic workplace.

Key Responsibilities
- Break down carcasses of various meat types
- Cut, trim, grind and portion meat accurately, and make sausages and other processed products
- Season, smoke and marinate products where needed, preparing meat to a gourmet retail presentation standard
- Use slicers, grinders and other meat-processing machines
- Weigh, pack, price and label products correctly
- Set up and look after appealing retail displays
- Inspect meat and finished goods for quality and consistency, and fill customer orders accurately and efficiently
- Keep an eye on stock levels, help with inventory and keep production, stock and inventory records up to date
- Clean and care for knives, equipment and prep areas
- Follow food safety, hygiene and workplace safety procedures in a clean, organised and compliant workplace
Requirements & Eligibility
- Minimum 3 years of relevant professional experience
- Certificate III in Meat Processing or a relevant qualification
- Proven carcass breakdown experience and strong commercial knife and meat-cutting skills
- Experience making sausages and other meat products, and competent with slicers and meat-processing equipment
- Sound knowledge of food safety and hygiene practices, plus an understanding of workplace health and safety requirements
- Stock and inventory management experience
- Able to work to customer specifications and order requirements
- Strong focus on quality, accuracy and presentation
- Able to show genuine, relevant and verifiable industry experience
