Chef and Cook

Who is hiring: a long-running, busy hospitality business in Queensland, filling several permanent roles in its Indian kitchen.

Roles open: Indian Curry Chefs/Cooks, Tandoori Chefs/Cooks and Indian Cuisine Sous Chefs, all for experienced specialists.

Day to day: turn out genuine Indian dishes at pace, keeping the food, its presentation and the running of the kitchen to a high standard.

Sponsorship: available to overseas applicants who are suitably qualified and meet Australian visa requirements. Applicants in Pakistan should note that overseas candidates need a positive skills assessment and an IELTS or PTE score.

Key Responsibilities

  • Cook the full Indian menu authentically: curries, tandoori items, sauces, breads, rice, entrees and desserts
  • Run and look after traditional tandoori ovens where applicable
  • Follow the house recipes, portions and plating standards for every dish
  • Contribute to menu planning, weighing up food and labour costs
  • Watch prep and plating so quality never drifts, and respond professionally to food quality problems or customer feedback
  • Inspect ingredients for freshness and quality, then keep food safely in temperature-controlled storage
  • Manage stock at the right level and reduce wastage
  • Keep hygiene, cleanliness and workplace safety high, maintaining kitchen equipment and hygienic work areas
  • Oversee, coach and support junior kitchen staff where required
  • Plan the kitchen's daily and weekly production alongside management
  • Stay organised, manage time well and work efficiently in a fast-paced commercial kitchen

Requirements & Eligibility

  • Minimum three years cooking authentic Indian cuisine
  • Previous roles as an Indian Curry Chef, Tandoori Chef, Indian Cook or Sous Chef
  • Commercial Cookery or Hospitality qualification relevant to, and appropriate for, the position
  • Strong command of traditional Indian cooking methods and authentic recipes
  • Keeps pace in a high-volume kitchen, with excellent organisational and communication skills
  • Dedicated to food safety, hygiene and workplace health and safety standards; able to supervise and train junior kitchen staff where required
  • Overseas applicants: positive skills assessment required
  • Overseas applicants: IELTS of 5.5 or 6.0 in each module, or an equivalent PTE score, required
