Grey, on New Zealand's West Coast: an established hospitality group is recruiting a Sous Chef or Senior Chef de Partie for kitchens across several of its venues. The work is varied, and the priority is food that is consistent and service that runs efficiently.
It is a senior position for someone with real commercial kitchen experience who is ready to be answerable for quality, prep and service. Rather than looking only at job titles, selection considers the kitchen work you have actually done, the responsibilities you held, your qualifications and whether you can prove the skills you list.

Key Responsibilities
- Take charge of the kitchen sections and service tasks assigned to you, adjusting to how each venue operates
- Cook breakfast, lunch and dinner to dependable commercial standards
- Inspect ingredients for quality and condition, then coordinate mise en place and the day's prep
- Produce sauces, gravies, garnishes and other components
- Prepare food that meets dietary and special requirements
- Portion, plate and finish each dish to the presentation standard, keeping it consistent even when service is under pressure
- Track stock and assist with inventory control
- Run and regulate commercial ovens, grills and other cooking equipment
- Keep work areas and equipment tidy, functional and safe, in line with food safety, hygiene and workplace procedures
- Work in step with the other chefs and kitchen staff, and guide, train and help junior team members
- Pitch in on functions, special events and extra services
- Put forward practical ideas for seasonal dishes and menu improvements
- Cover rostered shifts that include weekends, early starts and late evenings
Requirements & Eligibility
- NZ Register Diploma or a minimum of 3 years relevant professional experience
- Proven background in a commercial kitchen
- Genuine employment history that backs up the level of kitchen experience you claim, with supporting evidence for qualifications and previous jobs
- Strong practical cooking and food preparation skills
- Has handled busy services and works confidently across breakfast, lunch and dinner
- Sound grasp of portion control, presentation and food quality
- Works efficiently without dropping professional standards
- Strong communicator and team player
- Takes responsibility and shows leadership during service
- Has supported or trained other kitchen staff
- Knows food safety, hygiene and commercial kitchen practices
- Flexible about weekends, early mornings, evenings and rostered shifts
- Baking or dessert experience is an advantage
