Gundaroo, New South Wales: a long-standing hospitality team running a quality restaurant and events business needs one more Chef, qualified and experienced.

Kitchen set-up: menu-driven à la carte covers sit alongside large-scale functions. Expect special occasions, private functions, corporate events and weddings as well as regular restaurant nights. Fellow cooks are seasoned professionals, and the culture rewards teamwork, efficient service and excellent food. Suggestions about menus, costing of dishes, kitchen systems and produce from local suppliers are welcome.

Key Responsibilities

  • Turn out top-quality plates for function and à la carte services alike, matching the cooking method to every dish
  • Back the Head Chef in meeting each day's kitchen demands and delivering menus, and take part in menu planning, development and costing
  • Select and inspect produce on arrival and prepare it to the standard set, using sound knowledge of how local and regional ingredients should be handled
  • Run proper storage, stock rotation and ingredient handling routines, and play a part in placing orders and controlling inventory
  • Keep an eye on every stage of prep so plating, consistency and quality stay where they should
  • Reduce waste with careful prep, measured portions and correct storage
  • Hold the kitchen to strict hygiene and food safety rules
  • Keep your head during peak restaurant nights and big functions, and assist with organising workflow so service goes smoothly
  • Mentor junior cooks where needed and allocate prep jobs and other tasks according to what each team member can handle
  • Look for efficiency gains in the kitchen and pass on suggestions, and cooperate with front-of-house colleagues so every guest is well looked after

Requirements & Eligibility

  • Certificate IV in Commercial Cookery, or another recognised qualification of equivalent standing
  • At least 3 years in professional kitchens, with a solid commercial cooking and food prep background
  • Has worked in quality dining venues
  • Fine dining experience is advantageous; time spent in regional or rural hospitality is advantageous too
  • Good understanding of hygiene, food safety and kitchen procedure
  • Confident handling seasonal and fresh produce, with sharp focus on presentation, consistency and the quality of each dish
  • Fast, efficient kitchen worker who juggles several tasks and manages time well
  • Composed under pressure and able to make sound decisions
  • Communicates clearly, works well with others and can assist in supervising junior staff and delegating jobs to them
  • Professional in manner and committed to high standards of hospitality
  • Sincerely interested in a long-term culinary career in Australia
  • Must satisfy Australian employment and visa requirements as relevant
  • Visa sponsorship available to suitable overseas applicants lacking Australian work rights
