Location: Katoomba, Blue Mountains, New South Wales. Employer: a premium hospitality venue. Role: trade-qualified Sous Chef with a genuine love of Asian fusion food.
The kitchen needs someone who already has a track record: formal qualifications, a solid commercial kitchen background and skills you can show at the stove. Expect to help steer the brigade, shape service, contribute to new menus and lift team results, side by side with seasoned senior chefs.

Key Responsibilities
- Act as the person in charge of the pass while service is on, keeping every procedure precise
- Direct cooks so work flows in order, handing out tasks according to how busy service is and what operations require
- Watch over prep and sign off each plate for quality and look
- Use your understanding of Asian ingredients, flavours and techniques in daily cooking
- Sit down with senior culinary leaders to create dishes and plan menus, and suggest ways the kitchen can perform better
- Make sure recipes, portion sizes, flavour profiles and plating never drift
- Mentor, coach and train junior chefs and newer kitchen staff
- Liaise with the front-of-house team so service stays efficient
- Follow stock, orders and ingredient supply, and play a part in costing dishes, controlling portions and limiting needless waste
- Contribute to rosters and the sensible deployment of kitchen personnel
- Ensure the kitchen meets food safety, hygiene and workplace health and safety rules and stays clean, safe and orderly
- Foster accountability and high standards in the team and help senior management reach its operational, culinary and guest satisfaction targets
Requirements & Eligibility
- Chef who is trade-qualified, with recognised and relevant qualifications
- Minimum 2 years' experience in a Junior Sous Chef or Senior Chef de Partie position
- Solid hands-on background in a commercial restaurant kitchen
- Demonstrated work in, or substantial exposure to, Asian or Asian fusion cuisine
- Sound grasp of Asian ingredients, flavours, prep methods and cooking techniques
- Turns out high-quality food every time, even when service is demanding
- Has previously supervised or supported other people in the kitchen
- Understands how kitchen operations and service coordination fit together
- Knows ordering, stock control, food costing, waste management, menu planning and portion control
- Leads and communicates strongly, and treats food safety, hygiene and workplace safety professionally
- Can work rotating shifts that include weekends and public holidays
- Prepared to relocate and set up employment in Australia; dependable, professional and team-focused
