Key Responsibilities
- Run the kitchen's daily organisation and performance, leading staff through prep, service and close
- Hold food quality, presentation and consistency to a high standard
- Help create, refine and cost menus and dishes, and turn menu ideas into efficient kitchen procedures
- Track food costs, stock use, wastage and inventory
- Handle ordering, forecast stock needs so the kitchen never stalls, and keep supplier relationships strong
- Write practical rosters that match service demand and team skills
- Supervise, guide and motivate the kitchen team
- Help onboard, train and develop culinary staff, building a professional, accountable culture
- Find ways to boost productivity and service efficiency
- Make quick operational calls during busy, high-pressure services
- Keep HACCP, food safety and hygiene compliance in place
- Keep prep areas and equipment in top condition
- Work with hospitality and operations leaders
- Help resolve service problems while protecting food and guest standards
- Offer creative ideas to improve the dining experience and support senior culinary leaders on wider kitchen and operational initiatives
Requirements & Eligibility
- Proven professional experience as a Sous Chef or Head Chef
- Strong a la carte restaurant background
- Experience in standalone or multi-site venues; previous hotel or resort experience is advantageous
- Demonstrated kitchen leadership and team supervision, leading by example in high-volume service
- Strong understanding of professional kitchen systems and workflows
- Demonstrated commercial awareness of food costs, stock and wastage
- Excellent people-management and communication skills
- Confident decision-maker and strong problem-solver
- Creative, with a real interest in quality food
- Handles operational and administrative duties effectively, staying highly organised and detail-focused
- Consistently committed to food safety, hygiene and cleanliness, with a positive, professional approach to teamwork
- Able to work rotating shifts, including evenings and weekends
- Current Food Safety Supervisor certificate
- Current driver's licence
- Relevant culinary qualifications and/or substantial industry experience, which you can substantiate during the assessment process along with your professional experience
- Must meet the applicable criteria for employer-sponsored employment
