Key Responsibilities
- Turn out Japanese dishes that are authentic, uniform and well presented
- Slice and assemble sushi and sashimi with professional knife work
- Break down seafood and complete cold-side mise en place
- Run hot sections for Japanese cooking, covering grill, fryer, pan and yakitori
- Pick, prep and handle produce the way a professional kitchen expects
- Portion accurately and plate the same way every time
- Finish each day's prep list ahead of opening
- Rotate, store and keep stock fresh correctly
- Apply hygiene, sanitation and food safety requirements without exception, and keep your station tidy and set for service
- Stay quick and accurate when covers are high, working in step with the rest of the brigade
- Cover other sections and adjust to whatever the kitchen needs on the day
- Show discipline, care and professionalism, and pitch in with the team's day-to-day operational needs
Requirements & Eligibility
- Minimum 3 years working professionally in Japanese cuisine
- Proven employment in izakaya, sushi establishments, Japanese restaurants or similar commercial kitchens
- Demonstrated hands-on ability with sushi, sashimi or Japanese hot food
- Excellent knife work and experience with seafood
- Can show genuine practical cooking experience that matches the job
- Background in busy professional kitchens, with steady quality and consistency during peak services
- Sound knowledge of hygiene, food safety and commercial kitchen practice
- Punctual, dependable and professional
- Communicates well and fits into a kitchen team
