Key Responsibilities
- Look after a designated station from opening prep through to close
- Turn out dishes, international-style plates among them, at a consistently high level fit for professional dining
- Complete daily prep lists and mise en place before each service
- Follow the lead of the Head Chef and Sous Chef, while using your own initiative at your station
- Contribute to specials and seasonal menu items, offering your own ideas for new dishes and smooth daily service
- Get the most from every ingredient, protecting quality and avoiding wasted spend
- Hold high standards of personal hygiene, food safety and sanitation, with work areas tidy and set for service
- Keep track of what is running low and report ingredient needs to senior staff
- Unload, inspect and put away supplier deliveries correctly, using proper rotation in cool rooms, freezers and the dry store
- Limit waste by handling prep, storage and stock with care
- Keep your head and your pace when the restaurant is at its busiest
- Show up for team briefings, training sessions, supplier visits and development activities
- Learn about the ingredients and produce grown locally in New Zealand
- Talk to diners in a courteous, professional way when needed
- Get along well with colleagues from many backgrounds, cover for teammates when the operation needs it and handle other reasonable tasks from kitchen management
Requirements & Eligibility
- Work history as a Chef de Partie or equivalent commercial kitchen role, including running your own section
- Demonstrated skill in cooking to a professional standard
- Strong understanding of food safety procedures, hygiene and food prep
- Can work on your own and as a solid team member, treating colleagues in a multicultural team with respect
- Delivers steady results when the kitchen is moving fast
- Strong people skills and clear communication
- Positive, dependable and professional at work
- Detail-focused and committed to the quality of every plate
- Genuine love of the craft and keen to keep developing
- Well organised, with good control of your time
- Relevant culinary qualifications are advantageous
