Role at a glance: Sous Chef or Senior Chef for a busy restaurant operation in Surfers Paradise, Queensland. Your job is to drive better service performance, tighter kitchen organisation and stronger team standards.

You report in alongside the Head Chef. Expect to coordinate the cooks, guard food quality, run preparation and keep every shift operating efficiently.

Key Responsibilities

  • Back up the Head Chef in directing what happens in the kitchen each day
  • Plan prep work for lunch and dinner and coordinate both services so they flow
  • Be accountable for how every plate looks and tastes, every time
  • Supervise and guide cooks while service is on, train new staff and enforce the kitchen's set procedures
  • Monitor stock on hand, rotation and par levels
  • Keep food costs in check and reduce avoidable waste
  • Support rostering so labour is allocated sensibly
  • Make sure HACCP, food safety and WHS procedures are followed and the kitchen stays clean, structured and service-ready
  • Work hand in hand with front-of-house staff on what each service requires
  • Deal with issues quickly and professionally as they come up mid-service, staying productive and accurate when the pressure is high
  • Encourage a positive, disciplined, team-minded atmosphere

Requirements & Eligibility

  • Experience as a Sous Chef, Senior Chef or experienced Chef that you can demonstrate
  • A strong background working in professional commercial kitchens
  • A proven record of handling preparation and busy services
  • Demonstrated supervisory or team leadership experience, with the ability to train, guide and support other kitchen staff
  • Working knowledge of HACCP, food safety and WHS requirements
  • Hands-on knowledge of stock control and food cost management, and an understanding of kitchen staffing and labour needs
  • Strong communication and organisational abilities
  • Sharp eye for detail and kitchen cleanliness
  • Consistent standards maintained when service volumes are high
  • Confident both independently and in a team, with a professional, reliable and accountable approach
  • Positive attitude, strong problem-solving ability and a willingness to take ownership of kitchen performance and standards
  • Availability across a 7-day roster that includes weekends and public holidays
