Scale of the role, in numbers: seven food and beverage outlets, upwards of 60 kitchen staff and in excess of 12,000 meals each week. The employer is a long-established hospitality group in Sydney.

Cooking skill alone will not carry this position. The group needs a senior culinary leader with a track record of running big kitchen operations and getting steady results across several venues, someone who also brings commercial judgement, control of operations, people leadership and reliable delivery.

Key Responsibilities

  • Steer the kitchens of all seven food and beverage outlets and hold food quality, plating and service steady at every venue
  • Head a kitchen workforce of more than 60, supervising and growing their skills, and hire kitchen professionals at a range of levels
  • Lead menu development and roll new menus out across the different operations
  • Keep purchasing, inventory, labour spend and food costs under control, tracking kitchen budgets and adding to overall profitability
  • Set up kitchen systems, procedures and performance benchmarks that work, and look for practical gains in workflow, productivity and cost management
  • Oversee regulatory compliance, workplace health and safety and food safety
  • Partner with senior leadership and venue managers to reach operational targets
  • Uphold high standards in a busy, large-scale hospitality setting and build a kitchen culture that is positive and accountable

Requirements & Eligibility

  • Proven background as Group Executive Chef, Executive Chef or in a senior culinary post of equivalent level
  • Demonstrated accountability for complex operations and large kitchen teams, including running high-volume food production
  • Strong grasp of purchasing, labour control, budgeting and food costing, with demonstrated commercial insight into what makes a kitchen profitable
  • Track record in developing menus and keeping food standards consistent
  • Proven at hiring, training, mentoring and keeping kitchen staff
  • Strong people-management, communication and organisational skills
  • Can lead with a strategic view yet stay hands-on when required
  • Multi-venue hotel or hospitality experience is highly regarded
  • Understands regulatory requirements, workplace health and safety and food safety
  • International recruitment or sponsorship experience is advantageous
  • Able to supply verifiable proof of relevant work history and senior responsibilities; sponsorship available for eligible candidates
