Role: experienced Indian Chef for an established hospitality business in Victoria, based in West Melbourne.
Core skills needed: strong hands-on ability with Hyderabadi Dum Biryani, Tandoor cooking and South Indian tiffins.
Beyond the stove: a good kitchen depends on more than recipes. This chef will manage quality, keep costs under control, support the team and take ownership of every dish that goes out. You will also help run an efficient kitchen, develop staff, protect authentic culinary standards and have a say in menu and operational decisions.

Key Responsibilities
- Own the preparation and quality of Indian cuisine, keeping authentic standards
- Cook Hyderabadi Dum Biryani with authentic techniques and set recipes, along with Tandoor dishes and South Indian tiffins
- Contribute to menu development and keep recipes consistent
- Organise daily food preparation and mise en place
- Check deliveries of ingredients and monitor food quality
- Look after kitchen equipment and keep cooking temperatures correct
- Help with food costing, ordering and portion control, and keep storage and stock rotation efficient
- Prepare meals for customers who have allergies or dietary requirements
- Supervise kitchen staff and train and guide junior team members
- Keep the kitchen clean and organised
- Make sure food safety and hygiene requirements are always met, and support compliance with relevant food-handling and workplace regulations
Requirements & Eligibility
- Minimum 1 year of relevant industry experience
- A relevant culinary trade qualification or commercial cookery certification
- Previous work as a Chef, Sous Chef or in an equivalent position
- Strong capability producing Hyderabadi Dum Biryani
- Practical experience cooking with a Tandoor
- Experience making South Indian tiffins and authentic Indian dishes
- Experience controlling food costs and portions, plus knowledge of kitchen ordering and stock management
- Able to schedule, supervise or train kitchen staff
- Current Food Safety Supervisor certification is highly regarded
- Strong communication and leadership of a team
- Able to work independently and take ownership of your duties, with a reliable and proactive approach to kitchen operations
- Strong organisation and problem-solving skills
