Profile: an Indian cuisine specialist who has proven themselves in commercial kitchens and brings steady, reliable cooking, firm kitchen discipline and hands-on know-how. The employer is a hospitality business in Australia.

More than the stove: confident Indian cooking is the core, but you will also share the wider load of running the kitchen well, from planning prep and guarding food standards to managing stock, spending and waste, so each day flows without trouble.

Key Responsibilities

  • Signature work: cook Indian dishes that meet the house standards for quality and look, with recipes, portion sizes, taste and plating the same every time
  • Mise en place: plan the day's prep before service begins, keeping the flow efficient between prep benches and cooking stations
  • Peak hours: keep up speed and efficiency when the restaurant is packed
  • Spend control: keep an eye on how ingredients are used and help hold down food costs
  • Inventory: maintain suitable stock and assist with purchasing needs
  • Goods in: accept, inspect, put away and rotate supplies the right way
  • Menus: support menu prep, new recipe ideas and dish costing
  • Timing: coordinate what the kitchen is doing so meals go out promptly
  • Mentoring: give junior cooks practical guidance and training, and step in to supervise kitchen staff if required
  • Hygiene and waste: protect food safety, hygiene and cleanliness, and reduce waste with smart prep and stock routines
  • Collaboration: cooperate with the floor team and fellow kitchen staff

Requirements & Eligibility

  • Approximately 3–4 years cooking in commercial kitchens, in relevant roles
  • Proven background cooking Indian cuisine professionally, with deep knowledge of Indian ingredients, spice use, recipes and techniques
  • Time spent in a busy restaurant or other high-volume food operation
  • Advantageous: a hospitality qualification or relevant formal training
  • Knows food costing, portion control and how to manage kitchen costs
  • Understands stock control, ordering and keeping waste to a minimum
  • Holds quality and output steady when services get busy
  • Strong at organising work and managing time
  • Communicates clearly, works well with others and fits into a diverse hospitality team
  • Solid grasp of food hygiene and safe practice in the kitchen
  • Brings a professional, reliable and upbeat attitude
  • Prepared to undergo the relevant checks on employment, experience and eligibility
