General Manager

Position: General Manager, full-time, Gregory Hills, Sydney NSW. Employer: a premium Italian restaurant in New South Wales that has only recently been set up.

The task is to take this new venue and organise it into a complete, high-performing operation. You will not inherit a finished model. You will decide from the start how the restaurant runs, which means putting together the FOH structure, hiring the launch team, introducing systems, keeping costs in check and holding service to an exceptional standard. Responsibility spans the whole business.

Key Responsibilities

  • Own the pre-opening phase so the venue is operationally ready on day one
  • Set up workable FOH structures, floor plans and service flow, backed by SOPs, daily operating procedures and opening and closing systems for the whole venue
  • Build a strong launch team: recruit, interview, onboard, train and develop hospitality staff
  • Define service expectations and performance standards, and coach managers and team members towards a consistent service culture
  • Direct large FOH and bar teams on the floor each day, staying hands-on during service without losing commercial oversight
  • Draw up rosters against staffing needs and keep labour spend, wage costs and productivity under control
  • Operate the restaurant POS and other operational systems, Deputy included
  • Run the premium drinks programme of wine, spirits and cocktails
  • Keep a close watch on beverage costs, GP, pricing and margins
  • Handle purchasing, maintain supplier relationships and negotiate for sound commercial outcomes
  • Review guest experience, service quality and overall operational performance
  • Keep the venue compliant with RSA, WHS and restaurant requirements
  • Pinpoint gaps in operations and put effective fixes in place

Requirements & Eligibility

  • Strong record in senior hospitality or restaurant management, covering premium or high-volume restaurant operations
  • Demonstrated experience launching or establishing a new hospitality venue
  • Verifiable history of venues you have managed, launched or led operationally, plus a credible career history that demonstrates your previous hospitality leadership
  • Experience running substantial FOH and bar teams, with strong recruitment, staff training and leadership experience
  • Hands-on understanding of how restaurant floor operations work
  • Strong knowledge of wine, spirits, cocktails and beverage service, and experience managing beverage GP, costing, pricing and margins
  • Practical experience with rosters, labour budgets and wage control
  • Experience on POS and restaurant management platforms
  • Strong supplier negotiation and purchasing experience
  • Sound understanding of RSA, WHS and restaurant compliance
  • Ability to develop systems and procedures from the ground up, with strong commercial awareness and operational decision-making skills
