Role: Head Chef. Place: Cairns, Far North Queensland. Setting: a premium hospitality business with a busy, modern kitchen.
This post is about leadership. You set the food direction, drive how the brigade performs and hold the line on kitchen standards every day. It suits a seasoned chef keen to show what they can achieve under pressure.
To stand out, you will need genuine, provable experience in creating menus, running high-volume service, managing a kitchen and cooking modern dishes with Japanese or Asian-inspired influences.
Chefs applying from Pakistan or any other country should prepare an English CV, and note that the employer asks for documents supporting your experience.
Key Responsibilities
- Be accountable for how the kitchen runs and performs each day
- Coach, mentor and lead the brigade, keeping the team positive and accountable
- Write fresh seasonal menus with a contemporary style and put them into service
- Use Japanese cooking methods and Asian-inspired flavour profiles where appropriate
- Make sure every plate consistently hits the agreed taste, quality and presentation standards
- Organise mise en place and service during high-volume trading
- Control food costs, stock on hand and the kitchen budget
- Place orders and look after relationships with suppliers
- Keep the kitchen compliant on hygiene, food safety and workplace rules
- Find ways to make kitchen systems more efficient
Requirements & Eligibility
- Proven background in a Head Chef or Senior Sous Chef position
- Demonstrable time spent in premium, high-end or modern kitchens
- Japanese, Asian or fusion cooking experience is highly desirable
- Clear evidence that you have led kitchens and supervised staff
- Track record in seasonal concepts and menu creation
- In-depth understanding of hygiene and food safety practice
- Has managed kitchen operations, including stock and food costs
- Strong communicator who develops the people around them
- Performs effectively when service gets busy and is highly attentive to detail and presentation
- Professional experience must be supported by appropriate employment and experience documentation
- Sponsorship available to the right candidate once probation is successfully completed
