Sous chef and Head chef

A Wollongong hospitality operation is hiring at two possible levels: an established Head Chef, or an experienced Sous Chef ready to move up. Either way, the job goes beyond cooking into team development, kitchen performance and operational excellence.

The employer wants a culinary professional who takes pride in leadership and consistency and delivers exceptional kitchen standards, bringing strong discipline, initiative and a hands-on way of leading. Experience with Italian cuisine, pizza and pasta will be highly valued.

Key Responsibilities

  • Be the one holding the kitchen together through service, stepping in to take command whenever needed
  • Define the standard for food quality, plating and consistency, and hold the team to it
  • Motivate, mentor and grow chefs, cooks and junior staff, training them in prep methods, recipes and kitchen standards
  • Coordinate prep and service across all sections, working hands-on through busy, high-volume periods
  • Develop and refresh menus, recipes, specials and seasonal dishes
  • Keep watch on portions, food costs, waste and profitability
  • Manage purchasing, stock rotation, inventory and dealings with suppliers
  • Help plan rosters, schedules and labour
  • Maintain sound food safety, hygiene and workplace practices in a clean, structured, well-organised kitchen
  • Find ways to make the kitchen more efficient and support management with planning and operational decisions
  • Collaborate with front-of-house and management, building a positive, respectful team focused on performance

Requirements & Eligibility

  • Proven experience as a Head Chef, Sous Chef or in a senior culinary position
  • Demonstrated ability to lead a kitchen team and develop its people
  • Firm commitment to consistent food quality
  • Confident working in a fast-paced professional kitchen
  • Good grasp of food costs, stock control and managing wastage
  • Strong knowledge of food safety and hygiene
  • Effective communicator and team leader who is organised, dependable and professional
  • Flexible to work weekends and rotating rosters
  • Italian cuisine experience strongly regarded, and pizza and pasta preparation experience highly regarded
  • Relevant culinary qualifications or equivalent industry experience advantageous
  • Visa sponsorship is available for the right candidate; candidates requiring sponsorship may be considered subject to eligibility
