Sous Chef

Venue: a premium Japanese restaurant in the Australian Capital Territory (ACT), located in Parkes, Canberra. Role: Sous Chef, joining the culinary team as a key member.

Working relationship: you will partner with the senior culinary team to hold kitchen standards, coordinate service, grow the team's capability and make sure every plate reaches the required quality and consistency. Prepare an English CV listing each kitchen, its style and your position.
Key Responsibilities
- Kitchen leadership: help lead the team and run daily operations, taking charge of the kitchen when senior culinary management is absent
- Workflow: coordinate prep and service so the kitchen runs efficiently, supervising staff and giving direction during service
- Cooking: prepare and cook Japanese-inspired dishes to premium dining standards, keeping quality, consistency, portions and presentation on point
- Menu work: plan menus and seasonal specials with senior chefs, and help develop and test new recipes
- Training: give junior kitchen staff practical guidance and training
- Productivity: track kitchen output and find ways to work more efficiently
- Stock: assist with ordering, stock control and correct food storage, rotating stock and keeping waste low
- Costs: help manage food and labour costs
- Safety and hygiene: uphold strict food safety, hygiene and workplace safety standards
- Equipment and environment: keep equipment, workstations and prep areas properly maintained, and the kitchen professional and organised
Requirements & Eligibility
- Position history: proven experience as a Sous Chef, Junior Sous Chef or in a senior chef role
- Kitchen type: experience in a premium restaurant or high-volume professional kitchen
- Cuisine: Japanese cuisine experience is strongly preferred
- Skills: strong cooking ability and an understanding of professional kitchen procedures, with a passion for quality ingredients and high-standard presentation
- Leadership: able to lead, coordinate and motivate a kitchen team, with experience supporting junior chefs and building their skills
- Food safety: strong knowledge of food safety and hygiene practices
- Detail and pressure: excellent attention to detail and consistency, and able to handle several kitchen priorities during busy service
- Communication and organisation: strong interpersonal and communication skills, plus excellent organisation and time management
- Work approach: reliable, flexible and committed
- Availability: evenings, weekends and public holidays
- Qualifications: relevant culinary qualifications are desirable
- Overseas applicants: must satisfy applicable Australian employment and sponsorship requirements, and be willing to relocate to the Australian Capital Territory
