A Brisbane bakery café is hiring an experienced Baker on a permanent, full-time basis of 38 hours per week. The business is established and growing, and it bakes its bread, pastries and cakes on site every day.
The role has two parts. First, daily production: preparing, shaping and baking the full range. Second, finishing: decorating pastries and cakes, including custom celebration cakes made for customer orders.

Key Responsibilities
- Inspect raw materials, then weigh out and measure every ingredient
- Mix doughs and batters for breads and cakes
- Produce cake mixes, pastry and fillings
- Form and divide dough and pastry into breads, rolls, cakes and tarts
- Set trays and tins, load ovens, and keep oven heat and timing correct
- Apply icing, glaze, cream, chocolate, fondant and sugar paste to cakes and pastries
- Produce custom celebration cakes based on each customer's order
- Organise the daily production plan, then price, wrap and arrange items for the café display
- Operate mixers, sheeters, provers and other machines, and clean them after use
- Follow food safety, hygiene and WHS rules at all times
- Assist with recipe and product development, and train and oversee junior bakers and kitchen staff
Requirements & Eligibility
- Certificate III or IV in Baking or Patisserie
- Higher studies in culinary arts or patisserie are accepted in place of this
- Minimum 1 year as a Baker, Pastry Chef or Pastrycook
- Gained in a commercial bakery, patisserie or hotel kitchen
- Strong hands-on pastry ability
- Strong cake making and decoration ability
- Solid understanding of food hygiene and safety
- Willing to work early mornings, weekends and on a rotating roster
- Desirable: fondant and custom cake design
- Desirable: leading a team or supervising a kitchen
- Desirable: background in a customer-facing café or bakery
