Step one is knowing the employer: a well-established Italian restaurant group in Melbourne that continues to expand. It wants a Chef de Partie, or a Senior Chef de Partie, for the kitchen of its founding pasta bar, which has traded for a long time.
Step two is the section. The successful applicant takes sole charge of pans (pasta) or larder and needs a sound understanding of Italian food and culture. Step three is the setting, with house-made pasta every day, a newly completed kitchen, and supplies from Italian artisan producers plus farmers in the region.
Step four covers the terms. Employment is casual to begin with, at up to 40 hours per week on a fixed roster, and full-time contracts are reviewed once a trial of at least four weeks is done. Visa sponsorship is available for the right candidate. The rate offered depends on skill, palate, teamwork, experience and work ethic.

Key Responsibilities
- Take sole charge of the pans or larder section in service
- Finish all pre-service prep
- Arrange the mise en place for your station
- Answer for every dish from your section and its standard
- Coordinate with the Sous Chef during prep and service
- Maintain cleanliness, hygiene and food safety standards in the kitchen
- Strengthen a positive, motivated team and keep developing on the job
Requirements & Eligibility
- Relevant qualifications, supported by solid industry training
- Experience in charge of a section through peak service
- Able to work independently, organised, and a strong communicator
- Genuine interest in Italian culture, Italian cuisine and the origin of quality produce
- Sound food handling and hygiene knowledge, and a team player who still contributes a lot individually
