A hotel in Brisbane has an opening for a Head Chef with kitchen management duties. The position covers bistro dining, bar meals and a functions and events side that is expanding.
The hotel is looking for firm leadership of the kitchen team, menus that are well planned and correctly costed, and dependable delivery on event days such as celebrations, sporting lunches and charity functions. Quality and consistency must sit alongside sound commercial results. Sponsorship is available for the right candidate.

Key Responsibilities
- Lead, train and develop the chefs and kitchen attendants, and maintain a positive, professional working culture
- Prepare and cost bistro, bar and event menus in a modern Australian style, keeping presentation consistent, and coordinate event catering preparation, staffing and service timing with the functions team
- Manage ordering, stock, food costs, labour and waste in line with the agreed budgets
- Apply rigorous food safety, hygiene, allergen and WHS standards, and work hands-on in service so the kitchen stays organised and calm under pressure
Requirements & Eligibility
- Experience as a Head Chef or Kitchen Manager, including a solid background in hotel dining and high-volume functions or banqueting
- Culinary skill with sound financial judgement; the ability to run busy meal services and large events together; clear communication, a practical approach and commitment to developing the team
- Certificate III in Commercial Cookery and Food Safety Supervisor certification
