Expressions of interest are open for a Head Chef to lead a new luxury Modern Japanese fine-dining restaurant in the Sydney CBD that opens in mid 2027.
First, the setting. The restaurant belongs to a group with several award-winning venues and is being built in a prestigious new development with an award-winning Japanese architect and master ceramic artisans. Second, the work. You lead the brigade, plan menus with the Executive Chef, and manage every section from sushi and robata to omakase, à la carte and private dining, along with costs, purchasing and rosters. Third, the people side. The group asks for a confident, humble leader who keeps the kitchen free of bullying and intimidation. Finally, visas: sponsorship is considered for exceptional international candidates.

Key Responsibilities
- Lead the brigade, mentoring and inspiring each chef to perform at a high level
- Plan menus, innovation and execution with the Executive Chef
- Manage sushi, robata, omakase, à la carte and private dining sections
- Maintain exceptional food quality, consistency, presentation and guest experience
- Handle food costs, labour, purchasing, budgets, rostering and stock control for profitability
- Recruit, train and develop chefs while enforcing accountability and operational discipline
- Apply the highest food safety, hygiene and compliance standards and keep a professional, respectful team culture
Requirements & Eligibility
- Proven senior leadership in acclaimed Japanese premium-dining restaurants or internationally recognised hospitality groups
- Experience at renowned restaurants of comparable calibre is highly regarded
- Exceptional Japanese culinary knowledge, technical ability and attention to detail
- Strong commercial understanding of kitchen financial performance and of food and labour costs
- Demonstrated ability to develop, motivate and retain outstanding kitchen teams
- Excellent communication, organisation and leadership skills, and a calm, composed, professional approach under pressure
