A high-volume restaurant and pub in Sydney, NSW is recruiting a Sous Chef. The position works directly with the Head Chef and carries clear leadership duties over a young, energetic kitchen team.
The role covers three areas. First, operations, meaning ordering, staffing, food safety and full control of the kitchen when the Head Chef is absent. Second, standards, meaning supervision of preparation and presentation so every service stays consistent. Key Responsibilities
- Support the Head Chef with menu development based on seasonal local produce and costed to the forecast budget
- Manage daily ordering
- Manage kitchen staffing and rosters
- Maintain food safety controls
- Take leadership of the kitchen in the absence of the Head Chef
- Supervise food preparation and presentation against venue standards
- Run high-volume services efficiently and keep labour, product and operating expenses within budget as directed by the Head Chef and management
- Monitor and adjust quality and consistency of food and product delivery; train and develop the team
Requirements & Eligibility
- Sous Chef experience in a similar restaurant or pub, with high-volume experience
- Ability to assist the Head Chef in managing and monitoring food and labour budgets
- Effective leadership skills with the ability to train and mentor staff
- High, consistent food standards maintained while following HACCP procedures
